About the Author

LAUREN O’CONNOR, MS, RDN is an author, yoga instructor, and registered dietician. She’s written several books including Healthy Cooking for One and Heart-Healthy Instant Pot Cookbook. O’Connor also writes for Livestrong and Today’s Dietician. Additionally, she’s a member of the Academy of Nutrition and Dietetics (AND) and Food & Culinary Professionals (FCP).
